When I first lost weight and focussed on getting healthier (and actually it was the other way round, I wanted to feel better and if I lost weight, that was a bonus, which I then did go on to do)
I used to just eat tons of vegetables.
It sounds boring but actually it wasn’t, I really enjoyed it and the opportunity to be creative ![]()
I used to order a veg box as well as having a dabble in growing my own veg
and would sometimes count 12 different veggies on my plate and got real joy from it.
This was a time when I had a bit more time around meal prep and experimenting in the kitchen, not so much these days!
As I look now towards the holidays and having a little more time for food prep again, I’m looking forward to my Christmas veggies!
From the shopping of it at the greengrocers, to the looking up of recipes to the cooking and eating.
It doesn’t have to be over boiled broccoli and soggy sprouts!
I tend to roast a lot of my Christmas veg and add things like chestnuts, cranberries, nuts and different types of spices ![]()

Don’t get me wrong; I love all the trimmings and the mince pies
etc but it’s not going to be my focus.
This helps me feel good about fuelling my body right,
it also helps balance the cravings (helps, not eliminate!!) Also, if your plate is full of veg, it doesn’t leave much space for much else!
I plan on really enjoying the good stuff – I’m not going to eat any old mince pie or chocolate, I’m going to make sure I get the good quality ones and enjoy them
!
