Little hack I learnt from Tim Spector.
I was always taught to eat the skins of fruit and veg as much as you can as that’s where the vitamins are.
However, according to my family, you can’t have roasties with skins on so they end up in the food bin.
Until now!!
I just
– added ground nut oil (I’ve done olive oil too)
– salt
– mix them around (either in a bowl or just in the tray)
– in the oven on 200C for about 20 mins
– stirring them round every now and then
and hey presto!
Win all round (and save some space in the food bin!) ![]()
